My limited preliminary online research yielded a bit of help: if the marshmallows are sticking out of the cookie (just mixed into the batter like chocolate chips), they will melt and taste of burnt sugar. Well that's certainly not what I wanted! So I made the cookies like small thumbprints, stuck a few mini marshmallows in the hole, and then covered them with another flat layer of cookie dough. The results? I'm pleased.
The majority of the batch are fluffer-nutters. The ones along the bottom are plain peanut butter (so that at least some of the cookies would be edible... you know, just in case), and the crumbly ones on the left are PB&J. Sadly, the squeeze bottle of jelly has portion-control issues and is impossible to control. But they still taste good - that's why we saved the crumbles.

Wow, they look good! Would it work if you squeezed fluff into a thumbprint after they came out of the oven? Like with jam thumbprints? Or assemble fluff sandwiches after the cookies are cooled?
